Parker scored 28 goals for AFC during their championship-winning 2015-16 season, from 51 appearances. The striker joined AFC in January 2015, after signing from Leiston.
Luke Callander, Ryan Henshaw and Jack Newman have signed new deals with AFC, while Ross Bailey and George Clarke have both departed.
Ben Robinson, Jack Wilkinson, James Baker and Jordan Blackwell have also picked up new deals with the Yellows.
Lowestoft Town's Rob Eagle and Concord's Sam Bantick were AFC's latest recruits brought in by boss Jamie Godbold.
